Episode 1.2: Banana Ketchup & Tortilla Española | History of Banana Ketchup

 

In this video, I show you how to make Banana Ketchup from scratch, and talk about the incredible history behind Banana Ketchup, which was invented by scientist-heroine, Maria Orosa.

Banana Ketchup

Ingredients

  • 1 t oil

  • 1/4 onion, chopped

  • 1 thumb of ginger, grated

  • 2 garlic cloves, minced

  • 2 T tomato paste

  • 1/4 c vinegar

  • 1/4 c water

  • 1 t garlic powder

  • 1/2 t cayenne pepper

  • 2 T sugar

  • 3 ripe bananas, mashed

  • Salt and pepper

Instructions

1. In a saucepan over medium heat, add oil and saute onions for 1 minute. Add garlic, ginger, and tomato paste and sauce for 2 minutes. Season with salt and pepper.

2. Deglaze the sauce pan with vinegar and water. Add garlic powder, cayenne pepper, and sugar, and stir for 8-10 minutes.

3. Mix in bananas and continue to cook for an additional 10 minutes.

4. Cool completely and blend mixture. Store in airtight jar/container. This keeps for about 2 weeks.

Tortilla Española

Ingredients

  • 3 potatoes

  • 1/4 onion, sliced

  • 1/2 lb longanisa (optional)

  • 10 eggs

  • Vegetable oil

Instructions

1. Slice potatoes very thinly and set aside.

2. Add enough vegetable oil to the skillet over medium-low heat so that potatoes will be submerged when added. Add sliced potatoes and cook for 15 minutes. Cover and stir occasionally. Potatoes should not become brown or crispy - you can turn heat down if necessary. Remove potatoes and set aside.

3. In same pan, cook onions 3-4 minutes or until translucent. Remove from pan and set aside. Remove and reserve oil.

4. (Optional) Cook longanisa for about 5-6 minutes. If using skinless, crumble into small pieces. If using whole sausage, you can cook and then cut into 1 cm pieces. Remove from pan and set aside.

5. Beat 10 eggs in a bowl and season with salt. Add in cooled potatoes, onions, and longanisa, if using.

Flip method: Pour mixture into a 12 inch nonstick skillet over medium heat and use a spatula to gently uplift the egg as it cooks on the bottom, 3-4 minutes. Slide tortilla onto a large plate and flip uncooked side down back into the pan. Cook until tortilla is cooked to your liking, about 4 minutes.

Non flip method: Turn on your oven broiler to preheat. Pour egg mixture into a cast iron skillet over medium heat and use a wooden spatula or spoon to gently uplift the egg as it cooks on the bottom, 8-10 minutes. Place cast iron skillet under broiler for 3-5 minutes.

6. Serve with green onions and banana ketchup.
