Bistek Tagalog

Ingredients

  • 1.5 lb strip steak

  • 1/3 c kalamansi juice (can sub lemon juice)

  • 1/2 c soy sauce (Filipino soy sauce recommended)

  • 2 sweet onions

  • 6 garlic cloves

  • cooking oil

  • 2-3 bay leaves

  • 1 T butter

  • Steamed white rice (for serving)

Instructions

  1. Slice the steak into thin strips.

  2. In a non-reactive bowl, add steak strips, kalamansi juice, and soy sauce. Cover with plastic wrap and marinate for 30 minutes - 1 hour.

  3. Smash the garlic cloves with a knife and set aside for cooking.

  4. Peel and slice the sweet onions into thick rings (I did about 1/2 inch). Do not separate the rings.

  5. In a skillet over medium heat, add 1 T cooking oil.

  6. Add the sweet onion disks to the pan for about 2 minutes on one side (the disk should be just browned), then flip over for another 2 minutes, trying to keep the rings intact (it’s okay if some come apart). The onions should be slightly soft. Note: You can lower the heat here to keep the onions from getting too burnt.

  7. Remove the onion disks from the pan. Turn the heat to medium high.

  8. Add the steak strips (and all liquids) to the pan. Add the smashed garlic cloves and bay leaves and simmer for 3-5 minutes, or until the beef is cooked to your liking.

  9. Add the 1 T of butter - this will add a nice texture and taste to the sauce!

  10. Add the onions to the pan and turn off heat.

  11. Serve with white rice.
