Bulalo

 

Bulalo is the perfect soup that will warm your soul on a cold day. It’s best served with a bowl of rice and a side saucer of patis, but this soup is so flavorful you probably won’t even need it.

Ingredients

  • 2 lbs beef shank

  • 1 white onion, cut into 1-inch pieces

  • 1 head cabbage, cut into 1-inch pieces

  • 2 ears corn, cut in thirds

  • 8-10 small red potatoes, cut in half

  • 1 t peppercorns

  • 2 T patis

  • 8 cups water

  • 1 t cooking oil

Instructions

  1. Over medium high heat, add oil to stock pot. Brown the beef shanks on all sides.

  2. Add onions and water. Bring heat down to a low simmer. Make sure to scrape the browned bits off the bottom. Cover the pot.

  3. Keep pot on low simmer for one hour. Then, use a spoon to remove scum and oil from the top of the soup.

  4. Continue to cook for 3 hours on low simmer.

  5. Add patis and pepper.

  6. Add corn, cabbage, and potato to pot. Cover lid and cook for 20 minutes or until vegetables are cooked.

  7. Serve with rice.
