Episode 2.5: Homemade Tocino | American-made Filipino Food

 

This week on The Sago Show, I make homemade tocino for tocilog! Tocilog (Tocino + silog) is my favorite member of the silog family.

Homemade Tocino

Ingredients

  • 1.5 lbs pork butt, sliced thinly

  • 1/2 cup brown sugar

  • 2 T rice vinegar

  • 1 T salt

  • 1 T soy sauce

  • 1/4 c pineapple juice

  • 3 cloves of garlic, minced

  • 2 T ground annatto seed

Instructions

1. If necessary, cut the pork butt into 1/2 inch thick slices

2. Combine the sugars, vinegar, salt, soy sauce, pineapple juice, garlic, rice flour and annatto seed in a bowl.

3. Wearing gloves, toss and massage the pork slices in the sauce for at least 15 minutes.

4. Transfer to a covered glass container and let sit on the countertop for 12 hours.

5. Place in the refrigerator for an additional 12 hours and up to 2 days.

6. When ready to cook, place in a pan of simmering water. The water should cover the pork pieces.

7. As the water cooks off, brown the pork in the remaining oil. Service with an egg and rice.
