Episode 2.2: Sinigang na Salmon | Filipino Migrant Workers in Alaska

 

In this video I make Sinigang na Salmon, or Salmon Sinigang. Sinignang is a sour soup (typically from tamarind or guava). This sinigang uses a tamarind/sampalok powdered soup base, which is available at many markets or stores that sell Asian food.

Sinigang na Salmon

Makes 8-10 servings

Ingredients

  • 1 lb salmon head

  • 1 lb salmon scraps

  • 1/4 c cornstarch

  • 1 T salt

  • 1 t ground pepper

  • Oil

  • 2 L Water

  • 2 c taro, peeled and cut

  • 2 tomatoes, chopped

  • 1 onion, chopped

  • 1/2 daikon radish, sliced

  • About a handful string beans

  • About a handful of spinach (or another leafy green)

  • Sinigang soup packet

  • 2 T Miso paste

Instructions

1. In a separate pot, boil the taro for 7 minutes (make sure not to overcook - if they're too mushy, they'll break apart) and set aside.

2. Clean and pat the salmon pieces dry. Toss in cornstarch, salt, and pepper.

3. Fry salmon head over medium high heat until just browned and crispy on the outside.

4. Bring the water to a boil. Add onion, tomato, sinigang soup packet, and miso paste. Simmer for 10 minutes.

5. Add daikon, green beans, taro, spinach and cook for 5 minutes.

6. Add fried salmon and continue to cook for 3 minutes.

7. Serve with rice and patis.
