Beef Pares Mami

 

This dish was one that me and my sister would always share with my dad for our after-school snack! It always makes me think of home.

Ingredients

  • 1 lb beef brisket or shank (I used shank), cut into small pieces/cubes

  • Salt and pepper

  • 1T cooking oil

  • 5-6 cloves garlic, minced

  • 1 thumb ginger, grated

  • 1/2 medium red onion, chopped

  • 2 star anise pods

  • half of a cinnamon stick

  • 1/4 c sugar

  • 1/4 c soy sauce

  • 1 beef boullion cube

  • 2 c water

  • For serving:

    • cooked egg noodles (my local Chinese butcher and fish market actually had some for sale)

    • beef broth or bone broth, heated up (I used a 24 hour bone broth in my recipe!)

    • toppings of your choosing, e.g. chopped green onions, hard boiled eggs, sesame seeds, chili oil, toasted garlic

Instructions

  1. Season the beef with salt and pepper

  2. To a skillet over medium high heat, add cooking oil. When the pan is hot, add the beef. Toss until browned. Remove beef pieces from the skillet.

  3. In the same skillet, turn the heat down to medium. Saute garlic, ginger, and onions for 2-3 minutes scraping up any of the beef flavor that stuck to the bottom of the skillet.

  4. Add the beef back to the skillet (including any juices). Add star anise and cinnamon.

  5. To the skillet, add water, soy sauce, sugar, and beef bouillon cube. Bring to a simmer, and cover until the beef is tender (I cooked mine for about 2 hours). The sauce will have also reduced. Remove from heat.

  6. In a a single serving bowl, add your egg noodles and beef broth to the bowl. Add beef pares and some sauce. Add the toppings of your choosing!

    • I purposely left this step vague so that you can choose whatever ratios of ingredients you like!
