Spiced Peach Mango Pies

 

These spiced peach mango pies are like the ones at Jollibee, with some added cardamom and cinnamon!

Ingredients

  • 1 champagne, ataulfo, or philippine mango, chopped

  • Half of a 15 oz. can of canned peaches, chopped

  • 2 T of the canned peach syrup, reserved

  • 2 T sugar

  • 3 cardamom pods, ground

  • 1/8 t cinnamon

  • 1 T cornstarch, dissolved in 1 T water and combined into a slurry

  • Pie or empanada dough, cut into rectangles (you can use premade or follow my recipe here)

    • Keep the pie dough in the refrigerator until you are ready to add the filling!

  • Oil for frying

Instructions

  1. In a small sauce pan over medium heat, add chopped mango, peaches, sugar, and reserved peach syrup. Stir often, heating until the fruit is soft and broken down. Add the ground cardamom pods and cinnamon and stir to combine.

  2. Remove from heat and stir in the cornstarch slurry. The mixture should be thickened, and not runny. If you need to, you can add more cornstarch to thicken the fruit filling.

  3. Allow the filling to completely cool.

  4. Add a spoonful of filling to each dough rectangle. Fold the rectangle over and seal the edges well. Use a fork to crimp the edges.

  5. Fry in a pan at 350°F until golden brown.

  6. Enjoy alone or with vanilla ice cream :)
