Ube Pancakes with Quick Ube Syrup

 

I made these ube pancakes from scratch last weekend, plus a super quick ube syrup for topping. I also share a bit about the history of ube!

Ube Pancakes

Makes 10 pancakes

Pancakes:

Ingredients

  • 1.5 c flour

  • 3.5 t baking powder

  • 1 t salt

  • 1 T sugar

  • 2 T melted butter

  • 1 egg

  • 1.25 c milk

  • ¼ c ube halaya

  • 10 drops ube extract (or more, if you want it to be more ube-y)

  • Butter (for cooking)

Instructions

1. Mix dry ingredients together

2. In a separate large bowl, mix butter, egg, milk, and halaya together.

3. Mix in ube extract.

4. In a nonstick pan over medium-low heat, brush on butter and cook pancakes for 3 minutes on one side, 1 minute on the other side. Increase heat for a pancake with a crispy browned edge.

Ube Syrup:

Ingredients

  • ¼ c ube halaya

  • ½ c sweetened condensed milk

  • 10 drops ube extract

Instructions

1. Over medium-low heat, combine ube halaya, condensed milk, then ube extract. Whisk constantly to prevent burning.

2. Heat for a few minutes until thickened.
